Apple crisp for the home camper

My kitchen seems to be overflowing with an abundance of apples right now and I need to use them before they go to the dark side.  While flitting around the web I stumbled upon a recipe Epicurious has posted and was originally published in the cookbook Camp Cooking in the Wild: The Black Feather Guide to Eating Well in the Great Outdoors.  I am intrigued.  I believe in home camping; that is set up the tent in the backyard, roaring fire in our firepit (hole with rocks around it, throw in wood, set alight), sleeping bags, marshmallows roasting, ghost stories and happy children.  I am also a lover of away camping but sometimes you just can’t pull everyone’s schedule together and so for us home camping is the answer.

I think I will try this recipe tonight.  Hopefully it is as simple and tasty as it sounds.  Recipe is as follows: 4 cups peeled apples (dried apples will need to be rehydrated), 2 tbsp brown sugar, 1/3 cup butter, 3/4 cup all-purpose flour, 1 cup brown sugar, 1 tsp cinnamon, 1/2 tsp nutmeg.

1. Heat the briquettes for the Dutch oven or get your oven ready to bake at 350°F (175°C).

2. hydrate the apples and drain them, reserving 1/2 cup (125 ml) of the apple water. (I am peeling 4 cups of fresh apples)

3. Place the apples, brown sugar and remaining water in a greased Dutch oven or baking pan. (I am adding 1/2 cup apple juice instead of water)

4. Combine the topping ingredients and sprinkle it over the apples.

5. Bake for 30 minutes.
